Superfoods (a nutrient-rich food considered to be especially beneficial for health and well-being) are having a big moment, and our chef has come up with a great recipe for a delicious and healthy salad!


Kale Superfood Salad

1 ½ cups blueberries
2 cups edamame
1 cup dried cranberries
6 cups kale, chopped
2 cups Brussels sprouts, sliced thin
1 cup carrots, shredded
¾ cup cashews
½ cup sunflower seeds
1 cup red onion. diced
3 cups broccoli, chopped

Mix all ingredients in a large bowl and toss with Fresh Tomato Vinaigrette.


Fresh Tomato Vinaigrette

1 large tomato
2 cloves garlic
2 tablespoons red wine vinegar
½ teaspoon salt
Pepper to taste
Pinch of sugar
¾ cup olive oil
1 tablespoon basil, minced

Cut tomato in half and remove the core, place in blender and blend until smooth. Place tomatoes in glass jar and add remaining ingredients and shake well. Let set for 30 minutes or so and toss with the salad.
